Blue Corn Dutch Baby with Berries

Blue Corn Dutch Baby with Berries

Serves: 4


Ingredients: 

½ cup Long Table Blue Corn Pancake + Waffle Mix

⅔ cup whole milk

4 large eggs

1 teaspoon vanilla extract

4 tablespoon butter

Blueberries, to serve

Powdered sugar, to serve

Juice of 1 lemon, to serve

Instructions:

  1. Preheat the oven to 425°F. 
  2. Add the Long Table Blue Corn Pancake mix, milk, eggs, and vanilla extract to a blender. Blend until smooth.
  3. Add the butter to a 9-inch cast-iron skillet and place in the oven. Once the butter is melted, pour the batter into the skillet and bake for 12-15 minutes or until puffed and golden brown on top. 
  4. Remove from the oven and top with blueberries, and dust with powdered sugar, and a squeeze of lemon juice.
  5. Slice, and serve immediately!
