Our Ginger Cookie Pancake + Waffle Mix is an homage to a family-favorite cookie recipe. Specifically, Lindsey's Grandma Jenny's famous Ginger Cookies.
Grandma Jenny had all of the necessary elements of a storybook grandma - handmade aprons, teapots, hard candies, and, of course, cookies. Lindsey’s favorite was her Ginger Cookie, which Grandma Jenny would ship to Lindsey on her birthday - along with a card and a tube of toothpaste. We made them into a pancake mix! This mix will only be around this holiday season, for a short time.
Simple Instructions:
- Mix together the egg, the melted butter (you can use oil as well), and the milk (you can use non-dairy milks of all kinds).
- Add the pancake mix. Mix again.
- Fry hot & ungreased.
