
Long Table Gluten Free Banana Muffins

Ingredients
4 medium very ripe bananas, mashed
2 large eggs
⅓ cup unsalted butter, melted
1/3 cup honey
1/4 cup milk
1 teaspoon cinnamon
1 teaspoon vanilla
2 cups Long Table Popcorn Gluten Free Pancake Mix
Instructions
- Preheat the oven to 350F. Grease and line a 12-cup muffin tin.
- In a large bowl, combine the bananas, eggs, butter, honey, milk, cinnamon and vanilla until well combined.
- Add the Gluten Free Pancake Mix, and mix until evenly distributed.
- Transfer to the muffin tin and bake for 25 minutes, or until a toothpick comes out clean.
