Long Table Gluten Free Banana Muffins

Ingredients

4 medium  very ripe bananas, mashed

2 large eggs

⅓  cup unsalted butter, melted

1/3  cup honey

1/4 cup milk

1 teaspoon cinnamon

1 teaspoon vanilla

2  cups Long Table Popcorn Gluten Free Pancake Mix

 

Instructions

  1. Preheat the oven to 350F. Grease and line a 12-cup muffin tin.
  2. In a large bowl, combine the bananas, eggs, butter, honey,  milk, cinnamon and vanilla until well combined.
  3. Add the Gluten Free Pancake Mix, and mix until evenly distributed.
  4. Transfer to the muffin tin and bake for 25 minutes, or until a toothpick comes out clean.
