FAQ (waffles, etc)

How many pancakes does a bag make?
→ 12oz bag: 24 6 inch pancakes, 6 at a time. That's breakfast for two, four times. 

Can I make waffles with these?
→ Yes! Add 2T/30g liquid to any of our pancake instructions. 

Is it organic?
→ 90% of the grains in our pancake mixes are organic. We are a small operation and it doesn’t make sense for us to pay to certify organic. Yet.

How is there so much protein?
 We use heirloom grains with high protein content and (sometimes) nut meal. We do not use any industrially manufactured protein powders. 

How come popcorn flour is so low on the Popcorn Pancakes ingredient list?
→ Because it’s so light, and ingredients are listed by weight. It’s over half the product, by volume. That’s the whole point ;)

Is it NON-GMO?
Yes. GMO foods are bad for the soil, bad for biodiversity, and really bad for family farms. All of our core products are certified non-GMO, and our short runs use the same process 7 supply chain - they just sell out too fast to certify. 

It is Vegan?
→ All of our mixes are vegan. The instructions on the back of the bag call for egg and milk, but you don't have to make them that way: view vegan preparation instructions.

Is it whole grain?
 Yes. All of our pancake mixes are not just whole grain, but whole-kernel. Our grains are stone-milled, which is the most complete kind of grain you can eat. Most so-called 'whole grains' have the germ (the most nutritious part of the grain) removed to extend shelf life. It's a trick, and we don't use it. 

What are Heirloom Grains?
→ Heirloom grains are grains selected and planted from the best of each year’s crop, as was done for thousands of years before the industrial revolution. They have a variety and richness of flavor that modern grains simply cannot approach. Many of them contain gluten, but their gluten structures are fundamentally different: gentler, easier to digest.

Economy Shipping typical delivery times are 5-8 days. 

Standard Shipping typical delivery times are 3-4 days. 

Orders with multiple shipments will be charged shipping on a per-shipment basis, not a per-order basis. 

Pre-orders will ship when the entire order is ready. 

We do not offer expedited shipping at this time.

Whilden Hughes

He farms very differently from his grandfather.

The Farmer

Whilden Hughes is a 6th generation farmer, farming 5,000 acres of land in southeastern Wisconsin.

He sees his main job as making sure the land will thrive under another 6 generations of farmers.

He's kind of a big deal in the regenerative grains world: he's the co-founder of the Perennial Promise Growers Cooperative as well as local sustainable farmer group Farmers on the Rock, among others.

The Grain

Kernza is unique.

Other grains have to be planted every year. Their roots have to be ripped out to start all over again - which is hard on the soil!

Kernza is different.

Its thick, deep roots just keep going. Year after year, faithful and true, they clean water systems, they foster biodiversity, and they sequester way more carbon than other crops.

Kernza is delicious.

It tastes like wheat, but richer: a little grassier, deeper, and more nuanced.

It's got a whopping 18 grams of fiber and 19.2 grams of protein per 100 grams. Compare that to whole wheat: 10.3 grams of fiber and 9.2 grams of protein.

If you don't have good soil, you won't have good food!

It took thousands of years of prairie life to create the soil in the Midwest.

Soil is all about complexity and stability. Grasses, roots, bugs, microbes, beneficial bacterica, mychorrizae - food crops need them all.

It took chemical farming about 70 years to wreck it.

This leaves two chocies:

  1. Go all-in on chemical replacements for what should be in the soil (which, unfortunately, is how it's mostly done)
  2. Become a dirt farmer

Whilden is a dirt farmer. He's building a resource that will last another 6 generations: better soil.

Low-Impact, No-Chemicial Weeding

If you don't get rid of weeds, you're a weed farmer. (And not the fun kind!) They gotta go.

Conventional farming iust sprays them with toxic sludge. Like keeping mosquitos off your porch by lighting it on fire, it's very effective in the short run, but unwise over time.

Whilden's grandfather loved chemical herbicides because they solved problems. He watched yields go up, prices go up, pests go down.... He just didn't live into the decades where the costs became clear.

Today, Whilden's farm has a gentler touch. They use advanced weeding machinery that gives him fine-grain control over how he is removing things from his fields. It's a system he and only about a half dozen other farmers use. It looks like a giant and terrifying musical instrument.

Here's where pancakes come in!

Whilden wants to do all of this hard work.

He wants to grow more regeneratively, he wants to draw down the acres he still farms of conventional row crops.

But he can't do it unless you eat pancakes. (Kind of).

Whilden (& the Perennial Promise Growers Coop he started) can only afford to grow what there is demand for. This pancake mix is the first time his Kernza has made it into a product that a consumer can buy.

Your job is to close the deal. Eat pancakes.

Now, we know it's hard. But we must! We must eat pancakes! Even if they are delicious! Even if we already want to! Even if we have to make them for our friends and neighbors, we will eat pancakes!
