Gluten-Free Strawberry Shortcake Pancake Parfait

Ingredients:

¾ cup Long Table Gluten Free Pancake Mix

⅓ cup milk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

2 cups chopped strawberries

2 cups vanilla Greek or Coconut Yogurt


Instructions:

  1. Combine the Long Table Gluten Free Pancake Mix, milk, eggs, melted butter, and vanilla, mixing gently.
  2. Cook 1 tablespoon of batter at a time in a hot, ungreased skillet. Set aside.
  3. Layer the mini pancakes with chopped strawberries and yogurt in drinking glasses.
