
Gluten-Free Sweet Potato Biscuits
Sweet Potato GF biscuits
Makes: 12
Ingredients:
2 cups Long Table Gluten Free Pancake Mix
2 teaspoons baking powder
½ cup salted butter, cold
1 large egg
3/4 cup mashed sweet potato
¼ cup buttermilk
Instructions:
- Preheat the oven to 425F. Line a baking sheet with parchment paper.
- In a large bowl, combine the Long Table Gluten Free Pancake Mix, and baking powder.
- Cut the cold butter into cubes, and use your hands to combine, until crumbly and pea sized pieces
- Stir in egg, mashed potato, and buttermilk until a dough forms
- Tip the dough onto a floured surface and roll 1/2" thick
- Use a biscuit cutter or drinking glass to cut 12, 2-inch biscuits from the rolled dough. Place cut biscuits on the prepared baking sheet.
- Bake for 10-12 minutes or until golden, letting the biscuits cool on the baking sheet.
