Gluten-Free Sweet Potato Biscuits

Sweet Potato GF biscuits

Ingredients:

2 cups Long Table Gluten Free Pancake Mix

2 teaspoons baking powder

½ cup salted butter, cold 

1 large egg

3/4 cup mashed sweet potato

¼ cup buttermilk 

Instructions:

  1. Preheat the oven to 425F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the Long Table Gluten Free Pancake Mix, and baking powder.
  3. Cut the cold butter into cubes, and use your hands to combine, until crumbly and pea sized pieces
  4. Stir in egg, mashed potato, and buttermilk until a dough forms
  5. Tip the dough onto a floured surface and roll 1/2" thick 
  6. Use a biscuit cutter or drinking glass to cut 12, 2-inch biscuits from the rolled dough. Place cut biscuits on the prepared baking sheet.
  7. Bake for 10-12 minutes or until golden, letting the biscuits cool on the baking sheet.
