Heirloom Grain Cranberry Cobbler

Ingredients:
1, 14 oz can cranberry sauce
1, 16 oz bag frozen or fresh cranberries
1 teaspoon cinnamon
½ teaspoon orange zest
¼ teaspoon kosher salt
1 1/2 cups Long Table Popcorn Flour Pancake + Waffle Mix, divided
1/4 cup sugar
½ cup milk
⅓ cup melted butter, unsalted
Instructions:
Preheat the oven to 350F. Generously grease a pie plate with butter.In a large bowl, combine the cranberry sauce, cranberries, cinnamon, orange zest, and salt. Transfer to the pie plate.
In a separate bowl, combine the pancake mix, sugar, milk, butter, and vanilla extract.
Top the cranberry mixture with the pancake mix, and bake for 30 to 40 minutes.
Top with ice cream. Enjoy!
