Lemon Blueberry Snack Bars
Our friend Karina (@karinabakeswithlove) created these scrumptious Lemon Blueberry Snack Bars as a springtime treat, but we'll be snacking on them every month of the year.
Servings: 8-12
Ingredients
1 Can Evaporated Milk
3 Large Eggs
1/4 Cup Cooking Oil
1 Tsp Vanilla Extract
1/2 Juice of a Lemon
1/2 Cup Maple Syrup
Zest of 1 Lemon
3/4 Cup Blueberry
1 Bag Long Table Popcorn Pancake Mix
Syrup ingredients
1 Cup Blueberry
1/2 Juice of a Lemon
1/2 Cup Maple Syrup
Optional: Powdered Sugar
Instructions
- Start by zesting a whole lemon and squeeze the juice from half of one.
- Preheat the oven to 350 degrees and butter a 9x13 baking pan.
- In a large bowl, whisk all the wet ingredients together: eggs, lemon juice, maple syrup, vanilla, zest, milk and oil.
- Mix in the Long Table mix.
- Fold in the blueberries.
- Pour the batter into your prepared baking pan.
- Bake for 25 minutes.
- While that bakes, make the lemon blueberry syrup!
- In a bowl, smash your blueberries.
- Using the other half of the lemon, squeeze its juice on top of the smashed blueberries.
- Mix in the syrup.
- Run the mixture through a sieve to remove the skins of the blueberries.
- Remove the pan from the oven.
- Cut into rectangles or squares.
- Sprinkle with some powdered sugar and syrup.
