
Popcorn Flour Crepes
Ingredients:
1 cup Long Table Popcorn Pancake Mix
1 ½ cups whole milk
3 large eggs
4 tablespoons melted butter
1 teaspoon vanilla extract
Instructions:
- Combine the Long Table Popcorn Pancake Mix, milk, eggs, melted butter and vanilla extract in a bowl or blender, mixing until smooth, it should be the consistency of heavy cream.
- Grease a small skillet or medium heat. Once hot, add approximately 4 tablespoons of batter to the pan, tilted and twirling the pan to coat the bottom of the pan with the batter.
- Flip once the top is no longer shiny, and cook for about 20 to 30 seconds on the other side. Transfer to a plate, and grease the pan between each crepe.
- Repeat until no batter remains.
- Serve with berries, whipped cream, and powdered sugar.
