Sorghum flour gives these cakes a soft, buttery backbone, almond meal lends tender sweetness, and delicate teff seeds provide a hint of sparkle & crunch. A southern diner trick gives these GF cakes their structure: old fashioned potato starch.

Simple Instructions:
- Mix together the egg, the melted butter (you can use oil as well), and the milk (you can use non-dairy milks of all kinds).
- Add the pancake mix. Mix again.
- Fry hot & ungreased.
