Popcorn Pancake + Waffle Mix
Made with popped popcorn, oat flour, wheat flour, almond meal + poppy seeds
First, we pop the popcorn. Next, we grind it into the fluffiest flour on earth. Whole stone-ground oat and wheat flour, almond meal, and crunchy poppy seeds finish out these high-fiber, high-protein cakes.
Blue Corn Pancake + Waffle Mix
Made with blue corn, rye, buckwheat + hazelnut meal
Rich, fragrant blue corn complements a dry, lightly bitter backbone of buckwheat. Rye adds a peppery back-note, and hazelnuts give a buttery finish. These complex cakes go classically well with butter and syrup—but don’t be afraid to go savory with them, either!
Gluten Free Pancake + Waffle Mix
Made with Sorghum, almond meal & teff seeds.
Sorghum flour gives these cakes a soft, buttery backbone, almond meal lends tender sweetness, and delicate teff seeds provide a hint of sparkle & crunch. No xanthan gum or rice flour. A southern diner trick gives these GF cakes their structure: old fashioned potato starch. No one needs to know they're gluten free.

Each bag makes 24 6" pancakes, in batches of 6.
Simple Instructions:
- Mix together the egg, the melted butter (you can use oil as well), and the milk (you can use non-dairy milks of all kinds).
- Add the pancake mix. Mix again.
- Fry hot & ungreased.
