Golden Milk Pancakes

Ingredients

1  cup (90g) Long Table Pancake Popcorn Pancake Mix 

1 teaspoon vanilla extract 

½ teaspoon turmeric

¼ teaspoon cinnamon

¼ teaspoon ground ginger

1/4 teaspoon cardamom

Pinch black pepper

⅓ cup (80g) unsweetened coconut milk

1 large egg

2 tablespoons (25g) melted coconut oil

Date syrup, to serve

 

Instructions

Make the chai spice blend: in a small bowl, whisk together the cinnamon, cardamom, ginger, nutmeg,cloves, and allspice. Set aside.

In a large bowl, combine the Gluten-Free Pancake Mix, 1 ½ teaspoon chai spice blend, coconut milk, egg, coconut oil, and vanilla extract. Stir gently to combine.

Fry hot (375-400F) in an ungreased pan.

Serve, preferably with coconut whipped cream.
