Heirloom Grain Cinnamon Rolls

This delicious recipe yields 6 heirloom grain cinnamon rolls.


Ingredients:

3 cups (300g) Long Table Popcorn Pancake + Waffle Mix
2 teaspoons baking powder
2 large eggs
½ cup (120g) unsweetened almond milk
1 tablespoon vanilla extract
1 tablespoon (12g) butter, melted
1 tablespoon (15g) maple syrup


Filling:
2 tablespoons butter, softened
4 tablespoons brown sugar
2 teaspoons cinnamon

 

Instructions:

Preheat the oven to 350F. Lightly grease a small 6-inch baking dish or pan.

In a large bowl, combine the Popcorn Pancake Mix, add the eggs, almond milk, and vanilla extract, Mix well, and let sit for 5 minutes.

In a small bowl, combine the butter, brown sugar and cinnamon, set aside.

Lightly grease a piece of parchment paper, and add the rested dough. Gently roll out into a 12-x-6-inch rectangle.

Spread the rectangle with the butter-sugar mixture.

Roll, from the long side into a log, and slice into 6 equal pieces. Drizzle with melted butter and maple syrup.

Arrange the rolls into the baking dish, and bake for 20 minutes, or until golden.
