Raspberry Whipped Cream

This is one of our favorite pancake and waffle toppers. It's perfect for a those mornings when you want to treat someone (or yourself!) to a luxurious breakfast.

Ingredients

1 cup raspberries (fresh or thawed & drained)

1 tablespoon sugar

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 pinch of salt

1 teaspoon vanilla extract (optional)

 

Instructions

  1. Combine raspberries and sugar. Mash berries into a jammy consistency with a fork. Set aside.
  2. Combine whipped cream, powdered sugar, salt, and vanilla (optional) in a large mixing bowl.
  3. Use a hand or stand mixer to whip on high for 3-4 minutes or until you can make soft peaks on the tip of a spoon.
  4. Gradually add the sugary raspberry mix and gently fold it into the cream using a slow, sideways tornado motion with a spoon or spatula. Be sure to leave lots of beautiful magenta swirls!
  5. Serve on top of waffles or pancakes made with your favorite Long Table Mix.
